Susan Odell, President
Though newly elected as board president, Susan is far from a rookie. She has been passionate about food education and healthy eating since 1998 when she left her day job in financial management to attend cooking school. Since then she’s been a cooking instructor, an advocate for connecting local growers with consumers and most recently an entrepreneur with a small specialty food business. Susan was involved in the initial creation of EATS Park City and is thrilled to have witnessed the organization blossom into what is now Summit Community Gardens - EATS.
Melissa Stock, Past President
Melissa served as President of the Board from 2021 - 2025. Her nonprofit management experience helped direct, develop and grow the organization, and expand programs in equitable directions that align with the values of the Park City community.
She recently moved to Park City from Washington DC where she served as the senior financial officer of an international NGO for fourteen years. She supervised accountancy, investment management, and financial reporting across the organization.
Since moving to Utah, Melissa enjoys consulting for various international nonprofit organizations, participating on local nonprofit boards and committees, and advising small businesses. Her passion for health and nutrition began while raising her two elementary age children, whom often had to be reminded as to why they could not have pizza for every meal.

Joan Meixner, Treasurer
Joan has been on the Summit Community Gardens and EATS board for several years and has been its Treasurer since 2024. A 7+ year resident of Summit County she brings a deep financial perspective and love of the our community garden to the Board. Her professional experience includes many years in commercial real estate in customer-facing roles focused on business development, strategy development, financial analysis and deal enablement and execution, most recently with CBRE with prior experience in public accounting as an auditor.
Kelly Vendetti, Board Member
Kelly Vendetti served as the President of Summit Community Gardens from 2016 until the merger with EATS, and continues to contribute in her current role as Past-President. She holds a Bachelor of Science in Mathematics from the University of Notre Dame and an MBA in Finance from the University of Michigan’s Ross School of Business.
Kelly’s career spans over three decades in the corporate world, including roles as a partner in a management consulting firm and as Global Head of Operations for Goldman Sachs Bank. During her tenure at Goldman Sachs, she helped grow the firm’s Salt Lake City office to over 2,000 employees. After retiring from corporate life in 2016, Kelly launched a local business in Park City that specializes in test prep, college counseling, and math tutoring for high school students.
Beyond her professional work, Kelly has volunteered with the Park City Education Foundation, the Park City High School PTSO, and of course, SCG-E. When she’s not volunteering, she enjoys cooking, gardening, reading, and spending time with her dog at the Willow Creek dog park.
Rebecca Blanchette, Board Member
Rebecca Blanchette is a development professional working at Park City Community Foundation, managing the Women’s Giving Fund and Community Pass Club programs. She has a range of experience in leadership, volunteerism, building community, and fundraising. In addition to volunteering with Summit Community Gardens - EATS, Rebecca also volunteers at Recycle Utah and the Park City School District. She is passionate about immersing herself in the community and has a big heart for equity and inclusion. Rebecca attended the University of Georgia where she studied geography and sociology. Outside of work, Rebecca is always planning her next party or has a craft project she is working on. She loves hiking, camping, traveling, and skiing with her husband and two sons.
Bonnie Feola, Board Member
Bonnie is a pediatrician and certified chef who guides parents in developing their child’s taste literacy – the ability to feel comfortable with new flavors and at ease at the table. Through her weekly writing and personalized guidance, she brings clarity to the “how” behind easing mealtime frustrations and creating calm and confidence at the table. “Dr. Bonnie” trained in pediatrics at Texas Children’s Hospital, earned her chef certification from the Park City Culinary Institute, and completed advanced culinary medicine training through Harvard Medical School’s CHEF Coaching Program. As the founder of Nibbles and Sprouts™ and the Fussy to Foodie™ Collective, she blends medical expertise with culinary knowledge to guide families in a developmentally aligned approach that invites children to experience new flavors at a pace that feels natural, calm, and connected. Dr. Bonnie lives in Salt Lake City and is honored to serve on the SCG-EATS Board. She brings a pediatric culinary medicine perspective that supports the organization’s commitment to helping children and families connect with fresh food and meaningful learning across our community.
Caitlin Ladd, Board Member
Caitlin joined EATS as a Board Member in 2021 and as Secretary in 2022. She stayed on as a key member of the board after EATS and Summit Community Gardens merged.
As a New York barred labor and employment attorney, Caitlin has over a decade of experience advising employers and non-profit organizations on human resources best practices and employee relations matters. Caitlin earned her bachelor's degree from James Madison University and a Juris Doctor from St. John's University School of Law.
Caitlin has lived in Park City since 2016 with her husband, Del, and their three boys. She is an active member of the Parley's Park PTA and Little Miners Montessori community and an engaged volunteer and supporter of various non-profits throughout this wonderful community.
Seychelle Marcus, Board Member
Seychelle came to the SCG/Eats Board in 2022, and brings her knowledge of land management as our partner from Snyderville Basin Special Recreation District. Seychelle's passions include playing fiddle, recreating outdoors, conservation and humanitarian work. She graduated with an MS in Natural Resource Management from Utah State University, and a Major in Biology from the University of Utah. Her focus is natural resource restoration in the realm of soil and vegetation science.
Ketzel Morales, Board Member
Ketzel is a passionate and dedicated community advocate currently serving as the Outreach Coordinator for Jeremy Ranch Elementary School, where she works daily with families, students and colleagues to meet students’ basic needs. She is focused on advocating for the Spanish-speaking community, immigrants, and those facing food insecurity.
A lifelong Park City resident, Ketzel earned her bachelor’s degree in Global Communications from Utah State University. This led to her initial work with Charity Vision, an international non-profit. In 2022, driven by a deep-seated passion for education and helping others, she made a pivotal shift into local education and volunteerism.
In addition to her involvement with Summit Community Gardens and Eats, where her students benefit from the Curious Cooks and Fruit to Schools programs; her favorite event is La Milpa. In her free time, Ketzel enjoys attending concerts, listening to podcasts, and exploring different cultural cuisines.
Miriam Nieto, Board Member
Miriam Nieto serves as Director of Education at Holy Cross Ministries, where she leads initiatives that empower families and prepare children for lifelong success. Since joining the organization, she has played a key role in advancing early childhood education and family engagement. Originally from Mexico City, Miriam earned her degree in Early Childhood Education from the National University of Mexico. As a proud member of the Latino community, she is passionate about advocating for and working alongside Latino families to ensure they have access to resources and opportunities. Miriam is committed to building strong communities where every child—and every family—has the opportunity to thrive. Outside of work, she loves traveling, finds joy and energy in spending time with friends, and treasures moments with her family.
